I'm trying to achieve this with Zbrush right now, but super open to suggestions.

if what zero said is the case (i hardly know MD), then you can't make it any thicker in zbrush without remeshing it to a two sided mesh. a one sided plane doesn't have any vertices on the opposite side that would allow it to be inflated.

what you can also try though, is in zbrush, make a duplicate of the mesh, the go down to the "display properties" palette and click "flip normals" that will turn the mesh inside out. then merge the two meshes together. then in the "geometry" palette click "weld points". then go to the "deformation" palette and increase the "inflate" slider. that may work.
